Vegan Macaroni Salad

A delicious and creamy vegan macaroni salad, ideal for picnics and gatherings. This vegan version of a summer classic is incredibly tasty and easy to prepare in less than 30 minutes. Perfect to make ahead and refrigerate before serving.
Ingredients:
- 8 oz (225 g) macaroni
- 2 chopped celery sticks
- 1/2 chopped red pepper
- 1/4 chopped red onion
- 1/4 cup chopped sweet pickles
- 1/4 cup chopped fresh dill
For the dressing:
- 1 cup vegan mayonnaise
- 2 tablespoons pickle juice
- 1 tablespoon of lemon
- 1 spoon of sugar
- 2 teaspoons mustard
- Salt, pepper and garlic powder to taste
Procedure
1. Cook 8 oz of macaroni and rinse with cold water.
2. Mix with a little olive oil.
3. Add 2 sticks of celery, 1/2 red bell pepper, 1/4 red onion, 1/4 cup sweet pickles and 1/4 cup chopped fresh dill.
4. Prepare the dressing with 1 cup of vegan mayonnaise, 2 tbsp of pickle juice, 1 tbsp of lemon, 1 tbsp of sugar, 2 tbsp of mustard, salt, pepper and garlic powder to taste.
5. Mix everything, cover and refrigerate for at least 30 minutes.
