Vegan Caesar Dressing

This vegan Caesar dressing is incredibly creamy and comes together in just 5 minutes. Made with a cashew cream base and other simple ingredients, it mimics the rich flavors and textures of the classic dressing without using oil, eggs, anchovies, or vegan mayonnaise.
Ingredients
- 1 cup raw cashews
- 3/4 cup of water
- 2 cloves of garlic
- 3 tablespoons of lemon juice
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon capers, drained
- 1 tablespoon vegan Worcestershire sauce (optional)
- 1/2 teaspoon salt
Instructions
1. Soak the cashews in hot water for 5 minutes.
2. Drain the cashews and place them in a blender with the rest of the ingredients and fresh water.
3. Blend until you obtain a very smooth and creamy mixture.
4. Serve with vegan Caesar salad, accompanied by vegan croutons and optional vegan parmesan.
Grades
- The dressing keeps for up to a week in the refrigerator and can be frozen.
- For a nut-free version, replace the cashews and water with 3/4 cup of vegan mayonnaise.
Tips
- Can be used as a dip for vegetables, vegan pizza, and more.
- It can also be used as a dressing for wraps or salads.
