**Vegan Cheese Recipe**

- ¾ cup Yukon Gold potatoes, peeled and diced
- ¾ cup peeled and diced sweet potato
- 2 cloves of garlic
- ¼ cup raw cashews
- Juice of 1 lemon
- 2 tablespoons of nutritional yeast
- ½ teaspoon onion powder
- ½ teaspoon sea salt
- ¼ cup extra virgin olive oil
- ¼ cup of water

1. Place the potatoes in a saucepan and cover them with cold water about 1 inch above. Add a few pinches of salt. Bring to a boil, then reduce heat and simmer, uncovered, until tender, 8 to 12 minutes.
2. Drain and transfer to a high-speed blender with the garlic, cashews, lemon juice, nutritional yeast, onion powder, salt, olive oil and water. Blend until smooth.
3. Serve with tortilla chips for dipping or over pasta to make vegan macaroni and cheese.

- If you are using a powerful blender, such as a Vitamix, there is no need to soak the cashews. If you are using a less powerful blender, you can soak them for 2 hours. Drain them before adding them to the recipe.
